WHEAT GLUTEN

Gluten is a mixture of plant proteins: glutenins and gliadins found in popular grains, e.g. wheat, oats, barley, rye and spelt. In the bakery industry, the highest advantage of gluten is its viscosity and stringiness. Gluten absorbs high amounts of water thanks to which flour with gluten content makes a viscous and flexible mass when mixed with water. What is more, gluten keeps carbon dioxide created during the yeast fermentation in the dough, thanks to which the baked cake is spongy and stays fresh longer. Generally speaking, gluten makes it easier to prepare the products and guarantees their quality. This is why gluten is valued especially by mass bakeries. Moreover, it binds fats with water, emulsifies and stabilises, and is a perfect carrier for flavours and spices.

NATIVE WHEAT STARCH

Native wheat starch is a natural product, obtained from wheat grains in the multi-stage grinding, separating and washing off process, followed by dehydrating, drying and grinding. This is an important ingredient for producing confectionery, bakery and meat products. In the above-mentioned sectors, it is used as a filler, being a perfect additive to food, improving its texture and water binding properties. It increases stability of the finished product when stored and also during heat treatment. It is a white powder.

Wheat starch is used in food industry, including but not limited to meat and ready-to-cook products, vegetable, meat and fish canned products, for producing bread and confectionery products, in food concentrates, as a thickener for producing soups, desserts and sauces. Wheat starch is also used for gluten-free products.

MODIFIED WHEAT STARCH E1422

Modified wheat starch E1422 that is acetylated distarch adipate is starch esterified with adipic and acetic acid anhydrides. Modified starch is important for food industry where it is used as thickeners, stabilisers or emulsifiers. Modified starch is a loose white powder with high viscosity. It is used for producing mayonnaise, sauces, jams, in packaging industry related to meat, ketchup and fruit products, in meat industry as a binder and stabiliser.
